Syrian Spiced Stuffed Cabbage (Malfoof Mahshee): Omit the cilantro, mint, and parsley from the filling and add, with the water, 11⁄2 teaspoons ground allspice, 1⁄2 teaspoon ground cinnamon, 1⁄2 cup dried currants or raisins, and, if desired, 1⁄4 to 1⁄2 cup slivered almonds, pistachios, or pine nuts.

Syrian Sweet-and-Sour Stuffed Cabbage (Malfoof Mahshee): Use the tomato juice or sauce. Add 1⁄2 cup raisins, 3 to 4 tablespoons granulated or packed brown sugar, 1⁄4 cup fresh lemon juice, and 1 tablespoon temerhindi (Syrian Mock Tamarind Sauce) or 2 teaspoons prune butter and 2 teaspoons apricot butter.
